Chocolate Yogurt Cake
125g butter, melted
2 cups caster sugar
2 eggs
2 cups yoghurt, plain unsweetened
2 cups flour
Pinch salt
1 tsp baking soda
½ cup cocoa powder
½ cup white chocolate bits
1. Heat oven to 160°C fan bake. Grease a Bundt tin and lightly dust with flour. Place butter and sugar in a bowl and beat to combine. Beat in eggs separately.
2. Beat in yoghurt. Sift flour, salt, baking soda and cocoa over wet ingredients then stir to combine. Stir in white chocolate bits.
3. Pour mixture into prepared cake tin and bake for 1 hour or until a skewer inserted comes out moist but clean.
4. Transfer to a wire rack and cook in the tin for 30 minutes before removing. Serve hot or cold, with extra yoghurt on the side, if desired.
This is the cake I made for a friend who has just had a baby and I have just put one in the oven for us.
